How To Make Delicious Double Chocolate Vegan Cookies

Do you love cookies? Of course, you do. Who doesn't? Delicious, soft double chocolate cookies are my favourite! I can't make a cake to save my life (unlike my wife over at Scrummy Crumb) but I must admit that I make a mean cookie. Check these bad boys out.

The recipe is really straight forward. These cookies are suitable for vegans so when I say "butter" I do mean a dairy-free butter. You can obviously use standard butter if you don't want to use a dairy-free version. To make these delicious cookies you will need:

  • 100g  (1/2 cup) White Sugar
  • 112g (1/2/ cup) Butter
  • 125g (1 cup) Plain Flour
  • 100g (1/2 cup) Brown Sugar
  • 1 teaspoon vanilla extract (I substituted this for Orange extract to make chocolate orange cookies)
  • 56g (2/3 cup) Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1 Tablespoon of milk (I used Soy Milk)
  • 1/4 teaspoon Salt
  • 100g Vegan Dark Chocolate (Lidl or Morrisons own brand) chopped into small chunks. I chopped each square chunk into four pieces.
  • Baking Trays
  • Greaseproof paper

How To Make

  • Cream together in a bowl the butter and both brown and white sugar. Then add your chosen flavouring extract.
  • Preheat your oven to 180°c. Cut up some greaseproof paper and place on your baking trays (I used 2 baking trays).
  • Sift the flour and cocoa powder into the bowl and mix your salt and baking soda. Now its time to get your hands stuck in and mix it all together until it becomes crumbly.
  • Add the one tablespoon of milk and mix it all together into a cookie dough.
  • Add your chocolate chunks and mix together. The dough should be thick but not too sticky that you can't get it off your hands. Once all mixed, roll into balls and place onto your baking trays.
  • Place into the oven. If you like cookies that are soft in the middle and firm on the edges then cook for 10 minutes only. Once out of the oven let them sit for ten minutes to firm up a little.
Sit back and marvel at the amazing, mouth-watering cookies you've just made and wait for the praise to roll in from your family members.
